Clean the broccoli, removing the hardest parts, and wash them well under running water.
Peel the garlic clove and place it in a pan with 3 tablespoons of extra virgin olive oil.
Turn on a medium flame and, as soon as the garlic has reached a uniform golden color, add the soaked and chopped broccoli.
Mix carefully, cover with the lid and let the vegetables simmer for about 20 minutes.
Uncover, season with salt and cook. Peel the sausage and place it in a non-stick pan over medium heat.
Separate it well with the prongs of a wooden fork and cook for 20 minutes, turn off the heat and set aside.
Line a baking tray with baking paper and place the focaccia on top.
Spread the broccoli and sausage on top, drizzle with oil and bake at 200° for 10 minutes.
Remove from the oven, sprinkle with grated spicy Provolone Valpadana DOP and serve.
