Preparation

Clean the asparagus carefully and boil them in boiling salted water.

Put the butter in a large pan and light a medium flame. Cook the eggs in ox’s eye and adjust them with salt.

Separate the asparagus into individual dishes, place the eggs on top and sprinkle them with grated strong Provolone Valpadana P.D.O. and freshly ground black pepper. Serve.
