The Consortium, therefore, supervises the various stages of the Provolone Valpadana PDO and does so in a very strict way, under the specific assignment of the Ministry of Agriculture and Forestry. But it’s not limited to supervision: with an eye towards the future and the development of new markets, it offers technical and scientific assistance to constantly improve production technology, both from a sanitation and organoleptic point of view.
In practice, the Consortium is the shield that protects all those in the chain from any sort of unfair competition. For consumers, it’s a guarantee that protects them from fraud, counterfeiting and related damages, economic or to their health.
