Fields, barns, and milking

Every wheel of Provolone Valpadana P.D.O. comes from a supply chain that begins well before the milk itself: in the fields where fodder is grown and in the barns where dairy cows are raised with care and respect.

In this first stage, we enter the heart of the bond between land, animals, and tradition. The quality of the milk depends on the healthiness of the environment, a balanced diet, and animal welfare — values that have always guided the farmers within the P.D.O. network.

Milking, carried out using modern techniques and in full compliance with hygiene regulations, marks the moment when the farmer’s daily dedication is transformed into a premium raw material.

Cheese Processing

The milk collected from the barns becomes the key player in a process that is both technical and deeply rooted in care and tradition. During coagulation, the milk is treated with selected cultures and rennet, encouraging the formation of a compact mass — a delicate phase, where temperature and timing make all the difference.

Seasoning

Each wheel undergoes organoleptic, physicochemical, and microbiological tests to ensure full compliance with the product specification guidelines.

Only the cheeses that pass these strict tests are granted the P.D.O. label and can reach consumers, packaged and protected according to the highest standards.
