El\u00a0Or\u00edgenes del Provolone Valpadana<\/strong>\u00a0Su origen se remonta a la \u00e9poca en la que los monjes cistercienses se encargaron de la vasta operaci\u00f3n de recuperaci\u00f3n y canalizaci\u00f3n de las aguas crecientes y superficiales en el territorio comprendido entre los r\u00edos Lambro y Adda.<\/p>\n

Esta innovaci\u00f3n sent\u00f3 las bases para el desarrollo de un sistema de producci\u00f3n cerealista-zoot\u00e9cnico, orientado a la cr\u00eda de ganado lechero y a la elaboraci\u00f3n de queso, que se extendi\u00f3 desde el n\u00facleo original de la zona baja de Mil\u00e1n a todo el valle del Po y luego se consolid\u00f3 como principal centro econ\u00f3mico. recurso de la agricultura del valle del Po, lo que llev\u00f3 al nacimiento de muchos\u00a0quesos t\u00edpicos.<\/strong><\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Queso Provolone Valpadana<\/strong>\u00a0naci\u00f3 en el Valle del Po hacia la segunda mitad del siglo XIX de la feliz uni\u00f3n entre la cultura l\u00e1ctea de la \u201cpasta hilada\u201d, procedente del sur de Italia, y la vocaci\u00f3n l\u00e1ctea del territorio.<\/p>\n

La historia del Provolone Valpadana continu\u00f3 en 1861, cuando la unificaci\u00f3n de Italia permiti\u00f3 superar las barreras entre los diferentes\u00a0\u00e1reas<\/strong><\/a>\u00a0de la pen\u00ednsula y, por tanto, el asentamiento de empresarios del sur, que hab\u00edan trasladado sus actividades productivas a las provincias de Piacenza, Cremona y Brescia. Todav\u00eda hoy en estos\u00a0\u00e1reas<\/strong><\/a>\u00a0que se produce el Provolone Valpadana.<\/p>\n

Esto determin\u00f3 la difusi\u00f3n del cultivo y consumo de quesos de pasta hilada por todo el territorio nacional. El Valle del Po ofrece una gran cantidad de leche apta para la elaboraci\u00f3n del queso y tambi\u00e9n la infraestructura necesaria para lograr una producci\u00f3n de calidad, que se desarrolla en el Provolone Valpadana producido en muy diferentes formatos (desde unas pocas onzas hasta m\u00e1s de un quintal).<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

El nombre \u201cProvolone\u201d aparece en la literatura por primera vez en 1871, en el \u201cVocabulario di agricoltura di Canevazzi-Mancini\u201d (Cappelli, 1871). Por tanto, \u201cprovolone\u201d significa un provolone de gran tama\u00f1o. Un queso completamente original, distinguible de los dem\u00e1s.\u00a0pastas hiladas<\/strong><\/a>\u00a0queso muy extendido en el sur de Italia porque es grande en\u00a0tama\u00f1o<\/strong><\/a>, capaz de madurar durante mucho tiempo, sin secarse demasiado y por tanto sin convertirse en un queso rallado.<\/p>\n

La denominaci\u00f3n de origen \u201cValpadana\u201d se introdujo junto con el t\u00e9rmino \u201cProvolone\u201d en 1993 (Decreto del Primer Ministro 09\/04\/1993<\/u>), coronando una tradici\u00f3n centenaria que ha determinado las caracter\u00edsticas por las que el queso es conocido y apreciado.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t
