dairy product. The plasticity of the dough, characteristic of Provolone Valpadana during the\u00a0<strong>processing<\/strong>\u00a0phase, allows master cheesemakers to delight in producing cheeses with a wide variety of weights. Even today you can still come across some \u201cexperiments\u201d of a creative cheesemaker in the maturing warehouses of the dairy producers. The\u00a0<a href=\"https:\/\/www.provolonevalpadana.it\/en\/protected-designation-of-origin\/\"><strong>production regulations of Provolone Valpadana PDO<\/strong><\/a>\u00a0has safeguarded this cheese-making culture through the identification of typical geometric shapes, replicated in different weights.<\/p>\n<p>We distinguish 4 typical\u00a0<a and\/or lamb paste and by a maturation ranging from a minimum of 3 months to more than a year.<\/p><p>In addition, there are two additional types:<\/p><p>\u201c<a href=\"https:\/\/www.provolonevalpadana.it\/en\/provolone-valpadana-pdo\/smoked\/\"><strong>Smoked<\/strong><\/a>\u201d: one of the most popular smoked cheeses due to its unique combination of aroma and flavour; both the mild and strong types as in the smoked version.<\/p><p>\u201c<a href=\"https:\/\/www.provolonevalpadana.it\/en\/provolone-valpadana-pdo\/aged\/\"><strong>Aged Strong<\/strong><\/a>\u201d: the largest wheels undergo a long aging period, which can last even longer than one year.<\/p><p><a from the family of spun paste cheeses, which are characterized by the curd \u201c<a href=\"https:\/\/www.provolonevalpadana.it\/en\/characteristics-of-provolone-valpadana\/spinning-of-provolone-valpadana\/\"><strong>spinning<\/strong><\/a>\u201d technique and have ancient origins.<\/p>\n<p>The first notes on this\u00a0<strong>Italian cheese<\/strong>\u00a0date back to the Middle Ages and indicate the birth of their particular production technology in southern Italy.<\/p>\n<p>Coded with its own standard since 1938 (<strong><a href=\"http:\/\/dati.camera.it\/ocd\/attocamera.rdf\/CD0000007698\" target=\"_blank\" rel=\"noopener noreferrer\">Royal Decree 17 May 1938, n.1177<\/a><\/strong>), Provolone was protected as \u201cProvolone Tipico\u201d from the mid 1950s, as a result of the revision of national legislation on cheeses (Law n. 125 of 10 April 1954 and Presidential Decree 30 October 1955, n.1269).<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50
