The reason behind the existence of the Consortium for the protection of the protected designation of origin cheese Provolone Valpadana PDO is in its name: protection.
Because this cheese, which has an extremely distinctive identity in Italy and Europe, needs an authoritative and official Body, an expression of the raw material (milk) producers, the transformers and the ripeners (those who age the cheese for more than a year), it protects it, guarantees its consistency and excellence and helps raise awareness about its quality.
The Consortium, therefore, supervises the various stages of the Provolone Valpadana PDO and does so in a very strict way, under the specific assignment of the Ministry of Agriculture and Forestry. But it's not limited to supervision: with an eye towards the future and the development of new markets, it offers technical and scientific assistance to constantly improve production technology, both from a sanitation and organoleptic point of view.
